  瑞士蒙特勒(AFP)-感觉这里就像是一个奢侈餐厅,衣着笔挺的服务员倒上昂贵的红酒,食客一边欣赏着窗外阿尔卑斯山引人入胜的美景,一边听服务员对美食菜单细致入微的讲解。

  但是这里所有的服务员、西装革履的客人、甚至端送装饰精美的盘子的厨房员工,都是这所著名的瑞士酒店管理学校学生中一员。

  “这是学生实践学习的一部分,”Stephane Bernard-格里昂学校的服务指导老师,一边俯瞰着日内瓦湖畔蒙特勒小镇的动人景色,一边这样说。

  格里昂酒店管理学院这所学校是世界顶尖的三所酒店管理学校之一,这三所学校都在瑞士。

  一百多年以来,阿尔卑斯山一带富裕国家的酒店管理学校被认为是最好的学校,吸引了包括亚洲在内全世界的学生。

  仅格里昂学校就有大约来自100个不同国家的学生,法国学生最多,其次是中国、俄罗斯和瑞士。

  但是这些学校正面临着一系列新的挑战-和全球旅游格局的变化一致,很多富有竞争力且价位较为实惠的酒店管理学校在亚洲、中东和其他地区蓬勃发展起来。

  高昂的学费

  瑞郎的价值飙升致使格里昂原本就高昂的学费现在比欧洲其他学校贵了大约20%。

  焦虑不安的家长们已经问询了降低学费的事情,瑞士学校承认此事并申明:不会采取这样的方式。

  “我绝不会这样做,因为课程品质的提高大于价格的增长,”Michel Rochat说。 Michel Rochat-瑞士洛桑酒店管理学院(EHL)校长。EHL是世界上第一所酒店管理学校,成立于1893年,依然位于同类学校全球排行榜顶端,国际学生三年学士课程的学费在150,000瑞郎(212,028新加坡元)左右。

  不仅不会降低学费,Rochat还计划在9月份涨学费,用于支持学校每年对15%的课程进行改进更新的费用,这样使其与不断变化的酒店管理市场保持一致。

  尽管有不断增加的新学校尤其是亚洲的新学校竞争,他说,瑞士以创新和卓越而著称的声誉、绝美的自然风光和稳定的经济环境使其氛围不可复制。

  “从现在开始,到一百年后,我们仍将是顶尖。”Rochat说。

  格里昂的学生 Palita Lee表示赞同。

  “在瑞士,标准都是最高的。”她说,这也解释了她为什么千里迢迢从泰国来这里学习。

  这个19岁的女孩儿正优雅地倒一杯苏打水及同学点的鸡肉推荐一款上好的葡萄酒。

  行业未来的领导者

  她和别的同学一样,大家都努力着,专业地完成工作任务,但是他们未来的规划并不是做服务员或厨房部职工:他们是被作为行业未来的领导者培养的。

  就业保障

Brunier说:“当每年从其它领域毕业的学生的未就业人数和就业不确定人数不断增加时,将目标瞄准在欣欣向荣的全球旅游行业的学生还是有很富裕的选择的。”

  他说:“一名毕业生或许不能立马在管理一家日内瓦五星级酒店,但是如果他们想去上海或迪拜旅行的话,他们可以轻易找到一份管理职位的工作。”

  格里昂的校园主管 Peter Cross说格里昂85%的学生“在毕业之际已获得两到三份录用通知。”其他学生则或者是管理家族企业,或者是出于一些别的原因暂时还没有找工作。

  “课程结束时就业是很有保障的,”他说。

Lucile Falguieres,2005年毕业于格里昂,眼下在五星级的费尔蒙特蒙特勒皇宫酒店(Fairmont Montreux Palace hotel)任销售及市场总监助理,她说她当时刚出校门就被迪拜一家豪华酒店录用了,管理一个30人的团队。

  并且她说她后来一直在录用她所在的格里昂学校的学生及瑞士其他学校的学生。

  她说:“一旦你看见是瑞士学校毕业的,你就想雇用这个人。”

Schools say Switzerland’s top quality hotel management courses cannot be emulated in Asia, the Middle East and elsewhere.

MONTREUX, Switzerland (AFP) - It feels like a luxury restaurant, with starched-uniformed waiters pouring pricy wine and explaining the intricate details of a gourmet menu as diners gaze out at a spectacular mountain view.

But all the servers, the impeccably dressed guests and even the kitchen staff sending out elaborately decorated plates are in fact students at one of Switzerland’s famous hotel management schools.

“This is part of the student’s learning experience,” says Stephane Bernard, a service instructor at the Glion school, overlooking the picturesque town of Montreux on the shores of Lake Geneva.

The school is ranked among the top three such establishments in the world, all in Switzerland.

For more than a century, hotel management schools in the wealthy Alpine nation have been considered the best and draw students from around the globe, including Asia.

Glion alone has some 100 nationalities attending, with French the biggest group followed by Chinese, Russian and Swiss.

But these schools are facing a range of new challenges, with competing, less expensive establishments surfacing in Asia, the Middle East and elsewhere, in step with shifting global travel patterns.

- Sky-high tuition -

The soaring value of the Swiss franc, meanwhile, has made already sky-high tuition at the Swiss schools around 20 per cent pricier for students writing their cheques in euros.

The Swiss schools acknowledge that worried parents have enquired about price cuts, but insist that is not the way to go.

“I will never do that, because the increase of the quality is more than the increase of the price,” says Michel Rochat, who heads the Ecole Hoteliere de Lausanne (EHL). EHL, the world’s first hotel management school which opened in 1893 and still tops global rankings, charges around 150,000 Swiss francs (S$212,028) for its three-year bachelor programme for international students.

Far from cutting the price, Rochat plans to raise it in September to reflect the school’s annual revamp of 15 per cent of its curriculum to keep up with an ever-changing global hospitality market.

And despite growing competition from new schools in Asia especially, he says Switzerland’s reputation for innovation and excellence, its stunning nature and stable economy provide an atmosphere that cannot be emulated.

“We’ll still be on top 100 years from now,” Rochat says.

Glion student Palita Lee agrees.

“In Switzerland, the standards are at the top,” she says, explaining why she had chosen to travel from Thailand for the programme.

The 19-year-old graciously tops up a glass of sparkling water and suggests a good wine to go with the chicken ordered by a classmate.

- Future industry leaders -

She and the others work hard to carry out their tasks professionally, but they do not plan to be waiters or kitchen staff: they are being groomed as future industry leaders.

“The important thing is that they try everything, that they learn the needs of each profession and each service in the hotel so they can manage teams of specialists,” explained Alain Brunier, president of the Swiss Association of Hotel Schools and also head of the Geneva hotel school EHG.

Lee says she aims to manage hotels for a large chain so she can travel the world.

Her Glion classmate, Federico Pironti, a 20-year-old Italian-Austrian student, says he has set his sights higher.

“My big dream is to own hotels, not manage them. To own a hotel chain. It’s an expensive dream, I know,” he said, smiling underneath his chef’s hat as he prepares desserts in the kitchen.

These students view the tuition at Glion, a fully private institution charging around 185,000 Swiss francs for its three-and-a-half-year bachelor programme, as an investment that will certainly pay off.

- Job guarantee -

While an increasing number of students in other fields are graduating into unemployment and uncertainty, students targeting the still booming global tourism industry have a wealth of options, Brunier says.

A graduate may not immediately land a job managing a five-star Geneva hotel, “but if they are willing to travel to say Shanghai or Dubai they can easily find not just work but a position of responsibility,” he said.

Glion director of campuses Peter Cross says 85 per cent of graduates “have between two and three job offers at graduation,” while the others are either entering a family business or not looking for work for other reasons.

“There is a strong guarantee of getting a job at the end of the programme,” he says.

Lucile Falguieres, who graduated from Glion in 2005 and is currently associate sales and marketing director at the five-star Fairmont Montreux Palace hotel, says she was hired right out of school to manage a team of 30 people at a luxury hotel in Dubai.

And she says she has since hired her share of graduates from Glion and other Swiss schools.

“As soon as you see a Swiss school, you tend to hire the person,” she says.
